Ingredients
- 1/2 cup soy milk or other plant milk
- 1/4 cup raw cane sugar
- 0.7 oz yeast
- 4 cups gluten free flour
- 1 tsp salt
- 2/3 cup soy yogurt
- 1/4 cup vegetable oil
- 1 tsp vanilla extract

So next to the instructions
First warm the soy milk to room temperature, add the yeast and a tbsp of sugar. Whisk it until resolved and put it to the side for 4 minutes while you prep the next step
You need a big bowl to Combine flour, salt and remaining sugar. Whisk it
Create a little well in the middle and add the yogurt, salt, oil, vanilla extract and the yeast milk you’ve done. Mix all the ingredients together until combined and knead the ingredients until the dough is smooth for about 6-8 minutes

You could oil the dough but it needs to rest for about 50 min and rise
I’ll usually prepare it the day before and put the risen dough in the fridge over night.
Now I split the dough in half and start working on it . Knead it again on a clean surface and roll it out in a circle about 1/4 inch thick
To get the shape of a croissant you want to cut it in 8 pizza slices and roll each slice from the large end to the pointy end
The baking sheet need to be lined with parchment paper and leave enough space for them to raise again for 15 min while you set the oven on 355 Fahrenheit
Bake for about 15-20 min.
