Everyone loves a good carrot cake and it keeps it kid friendly
Perfect for any time of the year
For the cake
2 cups of wheat flour
1 tbsp baking powder
1 tsp baking soda
A pinch of salt
1/2 tsp ground ginger
1/2 nutmeg
1/2 found cinnamon
1 cup vegan milk
1 cup of sugar
1/2 melted oil
1/2 cup mashed banana
2 tbsp flaxseed
2 cups of grated carrots
2 tsp vanilla extract
For the frosting
2 tbsp orange juice
1/3 cup vegan butter
1 tsp orange zest
1 tsp vanila extract
2 cups powdered sugar
Instructions for the cake
Preheat the oven to 350 Fahrenheit
In a bowl, put together the flour, soda, baking powder, ginger, salt, cinnamon and nutmeg.
In another bowl combine mashed banana vegan milk, sugar, coconut oil, flaxseed and vanilla extract.
Add both bowl together. Now that everything is nicely mixed add the carrots. Now put the batter in a buttered baking pan.
Bake for 30 minutes until the toothpick comes out clean.
Instructions for the Frosting
Combine orange juice, zest, vegan butter and the vanilla extract. Add the powder sugar 1 cup at a time. Refrigerate until the cake is completely cooled down, spread the frosting over the cake.
